Pumpkin and corn soup



ingredients

    butter :- 2 tbsp
    oil :- 1 tsp
    chopped onion :- 1 nos
    pumpkin :- 350 gms
    boiled corn :- 150 gms
    vegetable stock :- 350 ml
    salt to taste
    black pepper powder
    boiled corn :- 50 gms
    butter :- 1 tsp
    milk :- 100 ml
    Whipped cream

preparation method

In a wok, add butter and oil to heat. Now add onion and sauté till golden brown.
Add pumpkin , boiled corn and cook for 5 minutes.
Now add salt and black pepper powder to taste.
Add vegetable stock and after a boil, cook for 20 mintues on a low flame.
In a separate pan, add butter , boiled corn , salt and black pepper powder and on a high flame cook until corn gets a nice colour.
Now , add the cool pumpkin mixture to a blender, and add to another saucepan after straining.
Add milk and check the consistency.
Now serve in a bowl.
