Almond Soup


Ingredients

Stock or water
6  Cup
Milk
2  Cup
Almonds
40
Butter
1  tablespoons
Flour
1  tablespoons
Salt and pepper
  As per taste
Cream
1/2  Cup
Bayleaf
2  pcs
Black peppercorns
8-10  pcs

 

Method

Method of preparation :- 1. Soak almonds overnight or if short of time, soak in hot water for 10 minutes. 2. Peel and grind them to a paste and mix with 2 cups of milk. 3. Heat butter, add bayleaf, peppercorns and flour and saute it on very slow fire for one minute. 4. Take it off the fire and slowly add vegetable stock or water, stirring constantly, bring to boil. Add almond milk and cook again for 5 minutes. 5. Ad salt and pepper to taste. Strain the soup and simmer on slow flame. 6. Stir in the cream and remove. 7. Serve garnished with toasted almonds.
