Method of preparation : 1. Dice 3 large cucumbers,2 large ripe tomatoes, 1 large potato and 1 large onion 2. Chop 3-4 cloves of garlic, 1 fresh green chilli and a few sprigs of mint. 3. Boil all the above ingredients in 2 cups of vegetable stock/water for about 15 minutes. 4. Remove, blend all the vegetables with the stock, pass through a strainer. 5. Add salt and freshly crushed pepper as per taste. 6. Finish with fresh cream and chill. 7. Serve chilled garnished with fresh dill leaves or crushed black pepper and a lime wedge |
