Mixed Vegetable Soup


Ingredients

Carrots
3  Chopped
Oil/Butter
2  tablespoons
Light Cream
½  Cup
Salt
  As per taste
Ginger
1Piece  cm
Bay Leaf
 
Onions
 
French Beans
100  Grams
Pepper
¼  teaspoons
Potatoes
 

 

Method

Method 1. Peel potatoes and cut into small cubes. String beans and cut into small pices. Peel carrot and grate fine. 2. Peel ginger and chop fine. 3. In a pan melt butter and heat. Add chopped ginger, bayleaf and processed vegetables. Saute until vegetables are just done. 4. Add 4 cups of vegetable stock or water. Cover and cook for 5 minutes. 5. Cool and pass through a blender. 6. Strain the mixture in a pan, bring to a boil. 7. Add fresh cream, salt and freshly crushed black pepper. 8. Serve garnished with fresh cream, chopped parsley and toasted bread cubes.
