Method 1. Peel potatoes and cut into small cubes. String beans and cut into small pices. Peel carrot and grate fine. 2. Peel ginger and chop fine. 3. In a pan melt butter and heat. Add chopped ginger, bayleaf and processed vegetables. Saute until vegetables are just done. 4. Add 4 cups of vegetable stock or water. Cover and cook for 5 minutes. 5. Cool and pass through a blender. 6. Strain the mixture in a pan, bring to a boil. 7. Add fresh cream, salt and freshly crushed black pepper. 8. Serve garnished with fresh cream, chopped parsley and toasted bread cubes. |
